Floors, ceilings, walls and doors.
An outdoor room is made the same way an indoor one is — a floor, something overhead, something at the edges and a way in. The concrete is the floor, and it is the part that decides what the rest can do.
Fireplaces, fire pits, seat walls, planter walls and outdoor kitchen bases all have to be planned into the pour rather than placed on it afterwards. Where the fire pit sits changes the joint layout; where the kitchen goes changes the fall for drainage.
That is why the useful conversation happens standing in the garden rather than over a plan.
Slate, brick, paver, tile, stone, wood.
Against pavers at $16–$28.

The comparison, honestly
Both are defensible. The trade-off is cost against the character of the failure mode.
On published per-square-foot figures, concrete runs $9–$16 and pavers $16–$28, with travertine at $20–$34. Stamped concrete sits at $14–$24, which puts it below pavers while imitating them.
The longer-term difference is what happens when the ground moves. A paver field is many small units, so movement shows as unevenness and weeds in the joints, and the fix is lifting and re-leveling. A poured slab is one unit, so movement shows as a crack — more visible, but there is nothing to weed and nothing to re-level.
What a patio actually turns on
The same six factors as any flatwork, weighted differently because a patio is looked at rather than driven on.
Access is usually the big one. A rear garden that a truck cannot reach means concrete moves by hand, and that is hours of labor a chute does in minutes. After that it is the finish: published per-square-foot comparisons put plain concrete at $9–$16 and stamped at $14–$24, and on a patio the stamped option is the one most people want.
Angi's Charlotte patio page publishes $6–$12 per square foot with an average project around $3,058. That is a national publisher's regional figure rather than ours, and like all such figures it has not seen your garden or the route into it.
A patio is built before it is poured.
Cecil red clay swells wet and shrinks dry, and the Piedmont gets dozens of shallow freeze–thaw cycles a winter. On a patio the consequences are different from a driveway: nothing heavy drives on it, but you look at it from six feet away, every day.

Fall before finish
A patio has to shed water away from the house. The fall is set in the base, before anyone thinks about pattern, and it is the thing you never notice when it is right.

Fire pits change the layout
Seat walls, fire pits, planter walls and kitchen bases are planned into the pour. Where they sit decides the joint layout, and adding them afterwards means cutting into finished work.

Joints follow the pattern
On a stamped field the control joints are laid out with the pattern rather than cut across it afterwards, so the line that has to be there reads as part of the design.
